A 27cm diameter terracotta tagin, Made in Spain by Valdearcos Marcos.
These glazed tagines are ideal for all types of cooking, from stove top to oven, or even on a bbq. As with most terracotta this tagine requires simple seasoning before first use (simply soaking in water for a few hours). When cooking with terracotta, the key is to increase and decrease heat gradually to avoid cracking and shattering the clay.
This tagine is easy to clean and is dishwasher safe.
Although tagines or tajines are mostly associated with morocco, they are used all over North Africa and also in some parts of Spain (Similar to a Puchero).
When you cook with a tagine, you allow the food to cook slowly and the steam to rise to the top before dropping back down, ensuring your food is kept moist and tender every time.
